August 12th is National Julienne Fries Day

I decided to start taking my own pictures (so I don’t have to worry about anybody trying to sue me over a picture) so I opted to also start enjoying the food for my National Food/Drink Pic of the Day!

I love fries but, I don’t eat a lot of root vegetables… I know bummer right? Not for me. I try and stay away from Sugar, Grains and Root Vegetables… I’m Diabetes free so it seems to be working and I try to keep at it. We eat meat, most veggies, fruit and dairy. My husband and I want to live long so we only try and take a break from our regimen once in awhile.

Definition of JulienneSo in honor of National Julienne Fries Day, I came to Claim Jumper and ordered their Shoestring Fries (that I will only sample because I hate thin crunchy fries), Coconut Shrimp, Salad and since they don’t carry a White Port, for my wine I had to go with a White Melon Moscato Sangria… which is very good… and cheap because it’s Happy Hour from 4-6p Mon-Fri and all day on Sunday.

Oh yeah… here’s my White Port Sangria Recipe

2 cups of White Port
1 cup Patron Citronge Orange Liqueur
2 oranges
1 mango
1 Mason Jar

Cut Mango in half. Take out the seed and cut one half into cubes and blend other half into a Mango juice, it might be thick but that’s ok, just make sure the mango is ripe and sweet. Then cut oranges into circles.

Pour White Port, Patron, Mango juice and slices from 1 full Orange into a Mason Jar.

Let sit, preferably for a day or two and in Sun preferably or fridge.

When ready to serve… pour White Port Sangria into glasses and garnish with other orange slices (1 or 2 per glass)

Top with a cherry and enjoy!

You can add in white tea bags, grapes, raspberries or other things that suit your taste. If you create your own, share it with me!

By the way… your Non-Port choice would be a Chardonnay or Pinot Grigio.

August 6th is National Root Beer Float Day

I have to stop being so busy and post these earlier in the day 🙂 so you can actually enjoy these ideas and fun recipes!

Instagram-National-Pic-of-the-Day-rootbeerfloatWell today was and still is in the Pacific North West and a few other countries… National Root Beer Float Day… and guess what?!?! I found a recipe to make a root beer float with three of my favorite things: Port Wine, Ice Cream and Thomas Kemper! You just top some vanilla ice cream (preferably Blue Bell) with a ruby port (I’d prefer Cockburn’s) and add a splash of cream soda on top (Thomas Kemper of course), and viola!

August 5th is National Mustard Day

It’s National Mustard Day! The Mustard Museum has been the official sponsor of this event since 1991.Instagram-National-Pic-of-the-Day-MustardI LOVE Mustard I love mustard on my fish and on a good corn dog or pretzel and I love to cook with it when frying my fish or chicken. But… okay… I’m not going to lie… it is very hard to pair Mustard with Wine… I’m just saying it’s the truth unlesss… your making a Mustard Wine or pairing the Wine with a dish you cooked with Mustard. So this will be all about cooking with wine and mustard and then pairing the dish with wine! I thought long and hard on this today, hence the reason this post is so late in the day!

Chicken and mustard and Fish and Mustard are sooooo gosh darn good. So I chose Mustard because August is considered national Catfish Month… crazy right?

Instagram-National-Pic-of-the-Month-August-CatfishAccording to www.Surfky.com, Starting back in the 1980s, President Ronald Regan designated the month of August to recognize contributions that the United States catfish industry had made to the economy.

Seasoned Fish Fry

  • 2/3 cup yellow cornmeal
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon seasoning salt or sea salt for substitution
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dill
  • 1/2 teaspoon preferred pepper (I use habanero)

Mix in a bowl and set to the side.

Wine Mustard (derived from a Whole Foods recipe I made my own)

  • 1/4 cup brown mustard seeds
  • 1/4 cup yellow mustard seeds
  • 1/4 cup dry mustard powder
  • 1/2 cup apple cider vinegar
  • 1 cup dry white wine (Try a Chardonnay, Riesling or White Port)
  • 1/4 cup coconut oil (melted)
  • 1/4 cup sugar (or substitute)
  • 1 tablespoon salt
  • 1 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon ground black pepper or paprika
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon garlic powder

Put all ingredients in a bowl with lid, stir, close lid and let sit. If possible make this the day before and let sit for 24 hours.

Put ingredients into a blender and purée until creamy. Refrigerate in jar after opening.

Mustard Fried Catfish

  • Catfish Fillets
  • Wine Mustard
  • Seasoned Fish Fry
  • Coconut Oil
  • Frying Pan (cast iron preferred)
  • Drying Platter
  • Paper Towels (or a cloth napkins)
  • Lemon
  • Dill

Turn stove top on medium heat, put coconut oil in frying pan (enough to cover fish). Rub Mustard all over catfish fillets on both sides and coat catfish fillets with  seasoned fish fry. Once the oil has melted and is hot, fry each fillet (more than one if able to fit them in the pan) until golden on each side. Place towels on top of drying platter and let fillets dry on top. Garnish with lemon slices and sprinkled dill.

Serve catfish warm with grits or salad.

Who doesn’t love Chocolate? Well… I do know a few… honestly I have to have it a certain way in order to enjoy it. Either way it’s National Chocolate Chip Day and I’m going to tell you what wines to enjoy with it!

So of course I am going to start off with the Port Wines. This wouldn’t be the Port Wine Diva blog if I didn’t! So here we go…

Port Wine with Chocolate

Ruby Port

Bittersweet, Semi-Sweet Chocolate and Chocolate with Nuts.

Tawny Port

Milk*, White Chocolate and Chocolate with Nuts.

*This Chocolate is VERY sweet by itself… just thinking about the combo makes my teeth hurt)

White Port

Chocolate with Nuts, Chocolate with Fruit

Now it’s time to go into the specific Chocolates and what wines to pair them with

Bittersweet

Ruby Port – a red wine with powerful fruit like: plum, cherry & berries.

Cabernet Sauvignon – a rich red wine with red fruit mixed with spice.

Syrah/Shiraz – a red wine with blackberry, plum & pepper.

Banyuls – a sweet but not syrupy Southern French dessert wine.

Semi-Sweet

Ruby Port – a red wine with powerful plum, cherry & berry flavor.

Syrah/Shiraz – a red wine with blackberry, plum & pepper.

Banyuls – a sweet but not syrupy Southern French dessert wine.

Merlot – a lush red wine with plum, black cherry & caramel.

Milk Chocolate

Tawny Port – a sweet red wine with baking spice, almond & caramel.

Muscat – a sweet wine with spice, honey & fruit cocktail.

Tokaji – a sweet wine with dried raisins, cocoa, spice & coffee.

Madeira – a sweet wine with caramel, almonds & hazelnuts.

White Chocolate

Rose Port – Ruby Port (a red wine with powerful plum, cherry & berry flavor) that has been fermented in a similar manner to rose wine.

Tawny Port – a sweet red wine with baking spice, almond & caramel.

Rose Wine – a crisp blush pink wine with flavors of red berries.

Muscat – a sweet wine with spice, honey & fruit cocktail.

Tokaji – a sweet wine with dried raisins, cocoa, spice & coffee.

Chocolate with Fruit

Cabernet Sauvignon – a rich red wine with red fruit mixed with spice.

Madeira – a sweet wine with caramel, almonds & hazelnuts.

Sherry – a dry dessert wine that is zippy and nutty.

Ice Wine – a very sweet wine with flavors of apricot, peach & mango.

Chocolate with Nuts

Ruby Port – a red wine with powerful plum, cherry & berry flavor.

Tawny Port – a sweet red wine with baking spice, almond & caramel.

Cabernet Sauvignon – a rich red wine with red fruit mixed with spice.

Riesling – a sweet wine with peach & orange blossom.

Chocolate with Cream Cheese

This would involve an entirely different post if i weren’t just talking about Cream Cheese because wine and cheese is a topic all on it’s own… but, since I’m talking about Cream Cheese… here goes.

Tawny Port – a sweet red wine with baking spice, almond & caramel.

Ruby Port – a red wine with powerful plum, cherry & berry flavor.

Cabernet Sauvignon – a rich red wine with red fruit mixed with spice.

Riesling – a sweet wine with peach & orange blossom.

As an end note… I have written the word chocolate so many times… it feels misspelled to me now…
